Lemon-lavender mug cake with Sencha syrup
Today I'm starting a new series #teawithLona (I've been using this hashtag quiet some time on Instagram after my dear friend came up with it, well, this friend of mine is very creative when it comes to creating new hashtags) and am going to share my favorite tea blends/companies, places and stories, so basically anything tea related.

To be honest, I said yes because I was curios, but I was very, I mean VERY skeptical about it. I mean, how can instant tea compare to real loose leaf teas??? Boy, was I wrong? Oh, big time. One rainy afternoon I was craving something sweet. Fall was in the air already, but I still wanted to feel that summer was in full swing still, so I made the perfect 5 minute recipe and combined the taste of lemon, lavender and Sencha green tea.
I don't know about you, but lemon-lavender is something I can't get enough of. I'm slowly getting back to healthy eating, but I have to stay away from too much fiber, otherwise I can end up in the hospital again, or even worse, I can find myself in the OR, and that's no bueno. I created this recipe without any added sugar, yet it satisfied my cravings and it was the perfect pairing for my Sencha green tea.
What you'll need:
- 3 packets of Pique Tea Sencha green tea (2 for the mug cake and the syrup, one for brewing the perfect cup)
- Lemon zest and the juice of 1 lemon
- 2 tablespoon honey (more if you want your syrup to be sweet, rather sour)
- 1 teaspoon culinary lavender ( keep some to decorate your mug cake, because we eat with our eyes first, I suggest you to rub the lavender first, then add it)
- 1 tablespoon oat flour (you can use any kind of flour really, or you can add rolled oats too)
- pinch of salt
- pinch of sulfate free baking powder
- 1/2 a banana
- 1 egg
I suggest you to start with the syrup first, that way your mug cake won't deflate by the time you are ready to pour the syrup over. My video is the first and only attempt making this recipe, so yeah, trial and error.
So for the syrup, you need 1 packet of Pique Tea, the juice of the lemon and the honey. Mix everything and bring it to boil, then let it simmer until you get a nice thick syrup.
Then, you mash the banana, add the egg, and all the ingredients. Mix it, then pour the mix in a previously cooking sprayed/greased mug or ramekin. Put in the microwave for between 1:25 and 2 minutes, depending on the power of your microwave. Be careful when you are taking it out, it gets hot. Then transfer it to a plate, pour the syrup on the top (I used half of the syrup on my mug cake and added the rest to my tea) decorate it with some lavender and ENJOY it!!!!
